Creamy Pumpkin Soup & Delicious Hot Cocoa!

When it gets really cold during this time of year, what feels better than a nice hot cup of hot chocolate or a bowl of soup to warm you right up? Soups and warm drinks are my type of thing all year round, as I am a coffee in the morning, tea at night, and soup for dinner type of person.

But this post has nothing do to with me. Jenn, someone whom I consider a dear friend, from cookin vegan has been sick the past week. While I can’t do much about that, I dedicate this soup recipe to her. Its so simple that she can make it while curled up in a blanket, but so delicious that it seems like it took hours to make.

30min Pumpkin Soup:

Ingredients:
1 c. vegetable broth
3/4 c. pumpkin puree
1/3 tsp. thyme
1/8 c. soy milk
pinch of salt

Method:
-Bring the broth, pumpkin, thyme, and salt to a boil and then simmer it form about 30 min.

-Puree it in the food processor and return it to the pan, bringing it back to a boil.

-Simmer it for a few minutes uncovered, and stir in the milk.

-Pour into a bowl and enjoy!

I was unable to take a picture due to my devouring it before i had realized what happened, but this is the closest resemblance i could find to it:

Now with it being the holiday season, nothing accompanies a bowl of soup like hot chocolate. Being vegan, I’ve had trouble looking for vegan hot chocolate brands in a non-vegan community. But that’s ok! Homemade tastes so much better. This recipe is not completely original. I am still kind of new to veganism (been at it for 3 months now) and had never made my own hot chocolate. So I simply modified another recipe to my own liking. But I love it!

Vegan Coconut Hot Chocolate

Ingredients:
4 tbsp. cocoa powder(i used dutch)
2 tbsp. agave (or maple syrup)
3 tbsp. canned coconut milk
3/4 tsp. vanilla extract
1 cup hot coconut milk (i used So Delicious)

Method:
-Stir together the cocoa powder, agave, canned coconut milk, and vanilla until well combined.

-Pour in the hot coconut milk until your cup is filled almost to the brim.

-Enjoy!

I also put a square from a vegan mint chocolate bar in here and it turned out delicious! Warm and chocolaty and minty. Definitely a delicious treat. Especially when you drink it out of a santa clause cup with two sweet & sara coconut marshmallows in it!

Well Jenn, I hope you get to feeling better! And keep up the amazing work on your site!

For those of you who don’t know her, get to know her. She is amazing both as a person and as a blogger.  Oh, and did i mention her version of goldfish crackers are absolutly delicious?! I made some whole wheat ones the other day and they were fantastic!

  1. Your pumpkin soup looks very tasty. I use So Delicious coconut milk in all of my soup recipes, so I’ll try making your recipe with it, instead of soy. I also make hot cocoa with So Delicious. I hadn’t thought of also adding a bit of canned coconut milk, too. That sounds like it would be very coconutty and delicious.

    1. The coconut milk kind of adds that thick luciousness you get with non-vegan hot chocolate. I love it!

  2. Where do I start? I don’t deserve how incredibly good you are to me. Really. Your kind words touch my heart and I’m so happy to know that someone caring and good like you exists in the world. I’ve never had anything dedicated to me, and I can’t think of anything more perfect than pumpkin soup. It sounds so delicious and I can’t wait to try it. Thank you for being my very dear friend.

And I really can’t take the credit for the Goldfish crackers. It was @VegESpots recipe…I just spiced it up a bit. I’m really glad they turned out well when you made them though 🙂

    1. I am speechless. You are truly a good friend to me and i was incredibly happy to dedicate a post to you! I enjoyed the soup, but it is still probably mediocre compared to what you have had in the past. I am still a beginner and don’t really have much else that i can do to show you how much your support through the past few months of being vegan have meant to me. so thank you.

  3. What a sweet post! Dedicating a recipe to a sick lovely? How nice!

    1. She is an amazing person, and absolute worth dedicating a post too. She is an awesome friend and i was glad to do it no matter how little my words matter. 🙂
