Mediterranean-Style Cashew Cucumber Dip

Chips and dip go together like peas and carrots. Its really hard to have one without the other. Just eat chips, and you end up with bland crackers. Just eat dip, and the flavor can get a bit over whelming. Put them beside one another on a platter, and its snack time nirvana!

The Mediterranean-style cashew cucumber dip(pg.66) is absolutely delicious.  The PPK say its supposed to taste like that Greek cucumber yogurt dip known as tzatziki, but i don’t think its quite there yet. But in my opinion, i think its better!

Its smooth and creamy, and it has that a lot of acidity that makes it really pop! Mine came out a bit grainy, but that’s only because my food processor sucks. Maybe next time, i’ll add a little soy yogurt to the mix. Other wise, this is an awesome dip taste fantastic with Trader Joe’s flax crackers!
