Spiced Rice Pudding

The wheather is shifting and cold is among us (at least, it is here in Georgia.) The holidays are just around the corner and winter is getting nearer. Even the decorations say fall.

Hot cocoa, macaroni, warm soups. Everyone is craving that warm comfort food feeling that will get us through sub zero. When it comes to being bundled up tightly in a warm jacket (or hoodie, if you’re like me), nothing beats the freezing temperatures  like some warm and fragrant rice pudding. Its sweet, filling, and hot. Just what this vegan needed.

Spiced Rice Pudding:

2 c. brown rice (cooked)
1/2 c. old fashioned rolled oats
1/3 c. rice milk
1 tbsp. arrowroot powder (or corn starch)
½ c. chopped pecans
¼ c. apple juice
½ c. apple (diced)
2 tbsp. cinnamon
1 tbsp. nutmeg

-Pour the rice milk into a sauce pan and add the rice and rolled oats. Heat over medium heat.

-In a small bowl, whisk the arrowroot powder, cinnamon, and nutmeg into the apple juice. Then pour it into the pan.

-Stir for about 4 minutes or until the mixture begins to get thick. Then fold in the pecans and apple.

-Serve warm and enjoy!

This recipe is so simple and so delicious! I think it tastes best when it is right off the stove, but every once in a while I’ll make it the night before I have work and will microwave it the next morning as a really quick and less-dish breakfast. Excellent way to start the day!

  1. I love rice pudding, and I haven’t made it in ages!

    1. It’s delicious! I even tried this recipe with quinoa for kicks. Kind of an odd texture, but I still loved it!
