Hello dear Ladies and Gentleman. Boys and girls. Young ghouls of the night. I welcome thee to the post of muffins so light, they could float in mid air. The perfect dessert for Halloween night. Black Widow Pumpkin bran muffins with black and orange spiced frosting!
“Black Widow” Pumpkin Bran Muffins:
1/3 c. apple sauce
2 tbsp. brown rice syrup(or other liquid sweetener)
1/3 c. brown sugar
1/2 c. So Delicious coconut milk
1 1/4 c. Pure pumpkin puree
¼ c. soy yogurt (or add extra pumpkin)
2 tbsp. pumpkin spice (cloves, nutmeg, allspice)
½ tbsp. cinnamon
1 ¼ c. whole wheat flour
1 c. Bob’s Red Mill wheat bran
1 tbsp. baking powder
1 tsp. baking soda
½ tsp salt
1/8 c. black food coloring
-Preheat your oven to 350 degrees Fahrenheit. Spray 9 large muffin cups (or 12 normal sized)
-Mix together your apple sauce, syrup, sugar, milk, pumpkin, yogurt, and spices.
-Add in the flour, bran, powder, soda, and salt. Stir it together until combined. Don’t over stir.
-Add in the food coloring and mix until the batter is black. Add extra if needed until they are as black as night.
-Bake for 1 hr or until a toothpick can go in and come out clean.
-Apply frosting and enjoy!
So while those are baking lets make that frosting , shall we?
Orange and Black Spiced Frosting:
½ c. cashews (preferably that have soaked for at least 2 hours)
8 oz. vegan cream cheese (i used Tofutti Better Than creme cheese!)
¼ c. sugar
2 tbsp. nutmeg
2 tbsp. cinnamon
3 tsp. black food coloring
3 tsp. orange food coloring.
-Mix cashews, cream cheese, sugar, and spices in a food processor until the mixture is smooth and thick.
-Pour the mixture into two bowls. Add the orange food coloring to one and the black to the other. Mix until it takes on the food coloring’s color.
-Cool in the fridge for at least 25 minutes or until it thickens.
So delicious, the pumpkin king himself would devour them!
There are so many ways to apply this stuff onto your muffins. Possibilities are endless! So I tried a few different ideas.
It tastes so sweet, I almost named these cupcakes! With it all being so much healthier than the store bought ones, who wouldn’t mind eating one for breakfast the morning after Halloween. Especially instead of a bag of candy. Its so healthy….its scary……
