Pumpkin Cream Cheese & Coffee

Pumpkin can be put into just about any dish you can think of. From savory to sweet, it can go anywhere any time of the day. As you may have read in recent posts, I am absolutely pumpkin crazy this time of year. And with my favorite meal being breakfast, its a perfect time to use the big orange fruit.
I am not much for packaged foods. I like to build my meals up from scratch. You get more appreciation for the complexity of flavor in each and every bite when you know what happened every step of the way. But sometimes you are too tired or in too much of a rush to make everything. So creativity and putting your own twist of already made foods tends to save the day.

Lets start off with my morning cup of joy: The pumpkin-spice latte.

Starbucks has been doing these for years and before I went total vegan, this was my favorite thing to have first thing every morning. But come to find out, not even their pumpkin spice syrup they use is vegan. It has condensed milk in it! But then again, that’s just an excuse to make my own without the 200 and something calories and gallon of sugar!

Pumpkin spice latte:
3 tbsp. Pumpkin puree
2 tbsp agave (or brown sugar)
½ tsp. ground cinnamon
¼ tsp. ground allspice
¼ tsp. ground nutmeg
¼ c. milk alternative (I used soy)
¾ c. coffee

-Mix the first five ingredients until completely combined.
-Put the pumpkin-spice puree into the bottom of a cup.
-Pour the milk into a microwave-safe glass and microwave on high for 1:30 minutes.
-Pour the milk into the cup over your puree.
-Add coffee and fill the rest of the cup.

Creamy deliciousness, and healthy enough for a second cup….or 10!

I work in a bagel shop and most of our bagels are not vegan. The cream cheese definitely isn’t! So if I work around them, minus well cope with a vegan bagel and some of my semi-homemade pumpkin cream cheese!

Pumpkin-Spice Cream Cheese:

4 tbsp. Tofutti Better than Cream Cheese (or another non-dairy cream cheese)
2 tbsp. pumpkin puree
1 tsp. cinnamon
1 pinch allspice
½ tsp. nutmeg
1tsp. Ground flax seed.

-Combine all ingredients together until well mixed.
-Spread onto a bagel and enjoy!

Simple enough?
Mmn. An autumn’s breakfast done right. I will be eating these until spring!!

    1. It tastes delicious! I love it on a sprouted grain bagel for breakfast.
