Superfood#10- Zucchini

When I was looking for a Friday Superfood for this week, I was searching through my fridge’s produce to see what I could use for an inventive dish. A humble zucchini sat in the back, collecting dust as I had not used it since I bought it a couple days ago. Well after some research, it turns out these things are a lot more packed than I thought.

The zucchini squash is probably the most popular member of the squash family. They are packed with beta-carotene as well as vitamins A, C, and K. Steam them, and they also aid with digestion too!  With summer heat still among us, eating zucchini also has natural cooling properties to keep your body from overheating.. NutritionData.com rated zucchini as a five star choice for loosing weight and to tell you the truth, none of this really surprises me. After all, they are made of over 95 % water and have only 13 calories (18 if you cook them) per shredded half cup, yet they have the fiber to fill you up.

Even if you have no idea about what nutritional benefits they have, just biting into one and getting that crisp, clean sensation in your mouth is evidence enough that there is plenty going on inside of this little green  vegetable. How do you know if you have a good one? The darker shade of green, the more nutrition inside.

So tonight was taco night. What a better way to show off zucchini’s wonderfully clean taste than a vegetable-filled shell of deliciousness. I have always loved tacos but could never get them to taste just right until now. So here is my recipe for zucchini-tempeh tacos:

Zucchini-Tempeh tacos

Indgredients
¼ c. crumbled tempeh
4 tbsp. tamari
2 tsp. cumin
1 grated zucchini
¼ c. vegan cheese
4 taco shells

Method
-Mix the tamari, cumin, and tempeh in a small bowl. Microwave it on high for 1 min.

-Build the taco with the tempeh first, then the zucchini, and then the cheese.

-Enjoy

Mmmn….Tacos…..

See? Who says tacos need to take a long time? Microwave the tempeh for a minute and BAM! One healthy meal, coming right up. And it won’t be like those greasy tacos that give you food poisoning either. The taste is crisp, clean and absolutely delicious.
