Tomatoes are one of the healthiest foods you can get. They also are served daily in most house holds and make up over 70% of the produce shopped for in 2009. It helps with skin problems by riding you of free-radical cells and is big on vitamins like C and K. There are so many ways to cook tomatoes, that it is insane!
½ lb. tofu
1 large tomato
1/8 c. herb of choice
2 tbsp. olive oil
-Wrap the tofu in a paper towel and set it on a plate. Set another plate on top of it and set a heavy object on top of that plate. Let it sit for at least 10 minutes. The longer it sits, the better.
-Heat the olive oil in a skillet. Core your tomato and smash it. Then put it and all of its juices into the skillet.
-Roll your tofu in the herbs and put them in the skillet with the tomato. Flip them after about 5 min. or until the side begins to brown.
I used a frozen tomato because you get the juices out of it easier, but ripe ones work just as fine. Just remember to smash it. The juices from the tomato seep into the tofu and give it a wonderful flavor. If you want to go all-out Italian, use basil as your herb.
I also ate what was left of the skin as shown as that big red blob on the left of my picture, but you don’t have to. I just like the fiber and extra vitamins. It isn’t very pretty, but it sure is tasty!
